I don't think the delidding would make much of a difference. These older AMD Opteron 6xxx server processors are made in a similar fashion as the newer EPYC (in that they're essentially 2 older Opteron dies "glued" together.) So if you planned to delid an AMD Ryzen (normal size, consumer grade CPU) then I'd say some older single die Opteron CPUs would be more similar for practicing on. Here's an article I've read before about a guy who made some AMD Opterons into a keychain. you can get them for ~$4 on eBay and they're very similar to newer AMD EPYC CPUs (AMD's enterprise equivalent of the Ryzen in fact most of the EPYC CPUs are just 2 or more ryzen/threadripper dies "glued" together, which are exposed when delidded.) I'd say some old AMD Opteron 6100 (61xx server processors) would be good for practice. If you (or anybody reading this) was to try doing this, you should practice on older CPUs because you'll probably trash a few with the learning process.
